Meatless Monday: Salata lawz dibas ruman


Simple and quick dinner, perfect for Monday night.


Salata lawz dibas ruman
(Almond Salad with Pomegranate Molasses)

50g cremini mushrooms
50g blanched almonds
50g green peas, blanched
1 small tomato, seeded and chopped
1 tbsp pomegranate molasses
1 tbsp milk
Pinch of salt
Mint leaves for garnish
Flatbread

  • Drizzle the mushrooms with oil and season with salt and ground black pepper. 
  • Bake at 200°C for about 10 mins or until just tender. Remove and chop.
  • Blend the almonds until smooth. 
  • Combine with molasses, milk and salt.
  • Toss all the ingredients together. 
  • Garnish and serve with flatbread.
