Vegetarische Pom (Vegetarian Pom)
1 hard boiled medium size egg, peeled
A:
125g grated pom tayer (roots of the tayer plant - Xanthosoma sagittifolium)
25ml water
Juice and zest of 1/8 orange
1/8 tsp worcestershire sauce
3/8 tsp piccalilli
3/8 tsp vinegar
3/8 tsp sugar
1/8 tsp salt
Ground black pepper
Pinch of ground nutmeg
B:
1/2 tbsp oil
15g butter
1/2 onion, chopped
50ml canned tomatoes
1/8 tsp vegetable stock cube
C:
1 heap tsp finely chopped celery
25ml water
- Mix ingredients A.
- Saute ingredients B for 5 mins.
- Add ingredients C followed by the egg. Simmer for 3 mins.
- Remove the egg and halve it.
- Combine the sauce with mixture A.
- Layer the bottom of a greased oven dish with half of the tayer mixture.
- Top with the egg and pour over the remaining tayer mixture.
- Dot with butter and bake at 210 C for 30-40 mins.
