Suya (Spicy Grilled Kebabs)
110g top blade steak, 1.5 x 2 in strips
A:
1 tbsp + 1 tsp grated onion
1/2 clove of garlic, crushed
Pinch of grated ginger
3/4 tsp tomato paste
1/4 Maggi beef cube, crumbled
B:
3/4 tsp oil
Pinch of salt
- Add ingredients A to meat and mix well.
- Add ingredients B and mix again.
- Marinade overnight.
2 metal skewers
C:
2-3 tbsp tankora powder (recipe below)
1/8 heap tsp white pepper
1/8 tsp ground cayenne pepper
D: (toss together)
2 cherry tomatoes
2 wedges red onion
1 wedge red capsicum
1 wedge yellow capsicum
2 tsp olive oil
Salt and pepper to taste
- Dredge the meat in ingredients C.
- Thread onto skewers, alternating with ingredients D.
- Shake off excess and drizzle some oil over each skewer.
- Grill 7-8 mins for medium rare.
Tankora Powder
1/8 cup roasted unsalted peanuts, crushed
1/8 tsp dried ginger
1/8 tsp ground red pepper
1/8 tsp white pepper
1/8 tsp salt
- Grind into a powder.
