Shakshuka
1 clove of garlic, crushed
A:
110ml diced canned fire-roasted tomatoes
1/4 jalapeño pepper, seeded and minced
1/8 tsp paprika
1/8 tsp ground cumin
B:
1/2 tbsp tomato paste
1/8 tsp salt
Coarsely ground black pepper
2 small eggs
- Saute garlic until fragrant.
- Add ingredients A and cook, partially covered for 10-15 mins.
- Stir in ingredients B and cook for 5 mins.
- Break the eggs into the sauce and cook, partially covered until whites are set 5-7 mins.
Variation:
Add 1/8 tsp dried oregano to ingredients A.
