Pechenye "Kaschtane" ('Chestnut' Biscuits)
40g butter
1 hard boiled egg yolk, mashed
1/2 tbsp sour cream
1/2 tbsp caster sugar
1/4 cup plus 1 tbsp flour
1/2 + 1/8 tsp baking powder
6 whole hazelnuts
- Cream the butter with the yolk.
- Beat in the sour cream and sugar.
- Fold in the flour and baking powder to form a dough.
- Divide into 6 portions and wrap 1 hazelnut within each portion.
- Shape into balls and place on a greased tray.
- Bake at 150 C for 20-25 mins.
- Cool on a wire rack.
Glaze:
8g butter
3 tbsp sugar
2.5 tsp milk
1/2 tbsp cocoa
1/3 cup coarsely ground almonds
- Melt ingredients A until sugar dissolves. Remove from heat.
- Coat each biscuit fully with the cocoa mixture before rolling them in ground almonds.
