Mauritian Vindaye

Where Flavor Was Born: Recipes and Culinary Travels Along the Indian Ocean Spice RouteDinner was simply a matter of re-heating this dish which I had prepared on Sunday night.


Mauritian Vindaye

1 haddock fillet

Coat the fillet with oil and grill until fish is cooked.

A:
1/2 big onion, thinly sliced
1/4 tsp minced garlic
1/8 tsp minced ginger

B:
1/4 cup white vinegar
2 x 0.8g sachets stevia or 1 tbsp 1 tsp sugar
1/2 tbsp fish curry powder
1/8 tsp ground cloves
1/8 tsp salt

  • Sweat ingredients A until tender.
  • Add ingredients B and stir until sugar dissolves.
  • Cover and simmer for 8 mins.
  • Pour over the fish fillet.
  • Cover and freeze overnight.
  • Re-heat and serve with sourdough bread and green salad
