Mauritian Vindaye
1 haddock fillet
Coat the fillet with oil and grill until fish is cooked.
A:
1/2 big onion, thinly sliced
1/4 tsp minced garlic
1/8 tsp minced ginger
B:
1/4 cup white vinegar
2 x 0.8g sachets stevia or 1 tbsp 1 tsp sugar
1/2 tbsp fish curry powder
1/8 tsp ground cloves
1/8 tsp salt
- Sweat ingredients A until tender.
- Add ingredients B and stir until sugar dissolves.
- Cover and simmer for 8 mins.
- Pour over the fish fillet.
- Cover and freeze overnight.
- Re-heat and serve with sourdough bread and green salad
