Higado de Res Especial (Special Smothered Liver)
2 x 1/2-inch slices of calves' liver
235ml boiling water
- Blanch liver in boiling water until grayish.
- Drain and remove skin from the edges.
Marinade:
1 clove of garlic, mashed
1/2 tbsp worcestershire sauce
3/4 tsp vinegar
Salt and pepper to taste
- Marinade for 30 mins.
30g bacon strips
Flour
- Grill the bacon and reserve the fat.
- Drain the liver and dredge in flour.
- Sear in hot fat then cook for 10 mins over low heat.
- Flip halfway through.
- Serve with fried onion, bacon and pickled canned jalapeño chiles.
