Higado de Res Especial

Zarela's Veracruz: Mexico's Simplest CuisineRelatively easy to assemble weeknight dinner.


Higado de Res Especial (Special Smothered Liver)

2 x 1/2-inch slices of calves' liver
235ml boiling water

  • Blanch liver in boiling water until grayish.
  • Drain and remove skin from the edges.

Marinade:

1 clove of garlic, mashed
1/2 tbsp worcestershire sauce
3/4 tsp vinegar
Salt and pepper to taste

  • Marinade for 30 mins.

30g bacon strips
Flour

  • Grill the bacon and reserve the fat.
  • Drain the liver and dredge in flour.
  • Sear in hot fat then cook for 10 mins over low heat.
  • Flip halfway through.
  • Serve with fried onion, bacon and pickled canned jalapeño chiles.
