GU (Gospel Uptown) Beer Braised Short Ribs
300g beef short ribs, 3 in long
Dry Rub: (mix all)
1 tbsp ancho chili powder
1/2 tbsp onion powder
1/2 tbsp smoked garlic
1/2 tbsp smoked paprika
1/2 tbsp smoked black pepper
1/2 tbsp dried oregano
1/2 tbsp chopped thyme
1/2 tbsp chopped cilantro
1/2 tbsp minced ginger
1/2 tbsp minced lemongrass
2 1/4 tsp brown sugar
2 1/4 tsp salt
175ml beer
- Pat the ribs on all sides with the dry rub.
- Marinade overnight.
- Place on the grill and sear.
- Arrange face side down in a crockpot and pour over the beer.
- Cook on low for 6-7 hours.
- Serve with barbeque sauce, collard greens and potato salad.
