Chai Thang Hon (Fried Noodles with Dried Shrimp)
25g dried shrimp
12.5g shredded dried squid
- Soak the dried seafood in water for 20 mins
50g bean thread noodle, soaked for 10 mins
- Blanch the noodles in hot water.
- Remove and plunge into cold water.
- Drain and set aside.
1/2 clove of garlic, crushed
1 tbsp fish sauce
1/2 tsp palm sugar
60g minced pork
25g pig's ear mushroom, shredded
- Saute garlic till fragrant
- Add the fish sauce and sugar and fry till sugar dissolves
- Toss in the pork and fry for 5 mins.
- Stir in the squid, shrimp and mushrooms.
- Mix in the noodles and fry till noodles and pork are cooked.
