Bolo Polana (Cashew and Sweet Potato Cake)
1 egg, separated
Pinch of cream of tartar
1/8 cup butter, room temperature
1/4 cup sugar
1/4 cup roasted cashew nuts, finely ground
1/4 cup cooked mashed sweet potato
Pinch of salt
- Beat egg white with cream of tartar.
- Gradually beat in half the sugar until stiff. Refrigerate until needed
- Cream butter and remaining sugar.
- Whisk in the egg yolk.
- Fold in the cashew nuts, sweet potatoes and salt.
- Mix in the egg whites.
- Spoon into cupcake liners until 2/3 full.
- Bake at 180 C for 20 mins.
