Bolo Polana

The World Cookbook for Students Volume 1This flour-less dessert uses sweet potato rather than potatoes.


Bolo Polana (Cashew and Sweet Potato Cake)

1 egg, separated
Pinch of cream of tartar
1/8 cup butter, room temperature
1/4 cup sugar
1/4 cup roasted cashew nuts, finely ground
1/4 cup cooked mashed sweet potato
Pinch of salt

  • Beat egg white with cream of tartar.
  • Gradually beat in half the sugar until stiff. Refrigerate until needed
  • Cream butter and remaining sugar.
  • Whisk in the egg yolk.
  • Fold in the cashew nuts, sweet potatoes and salt.
  • Mix in the egg whites.
  • Spoon into cupcake liners until 2/3 full.
  • Bake at 180 C for 20 mins.
