Aussie Steak Sandwich
165g skirt steak, trimmed of sinew but leave the fat
2 slices of Turkish bread
3 slices vine-ripened tomato
Rocket leaves
Marinade: (process all)
1/3 garlic cloves, minced
1/3 long red chilli
1/3 cup olive oil
1 tbsp kecap manis
1 tsp sherry vinegar
1 tsp worcestershire sauce
1/2 tsp canned chopped tomatoes
1/8 tsp freshly ground black pepper
1 tsp chopped thyme leaves
- Rub marinade into steak and leave for 2 days.
Onion Confit:
12.5g butter
1 medium onion, finely sliced
1/2 tsp sugar
Rosemary leaves
- Melt butter.
- Add sliced onions, sugar and rosemary.
- Cook until caramelized.
- Keep chilled up to 1 month.
Honey-Mustard Mayonnaise: (mix all)
2 tsp mayonnaise
1/2 tsp dijon mustard
1/4 tsp runny honey
- Pat meat dry.
- Grill over high heat to medium-rare.
- Rest. Meanwhile, reduce the marinade.
- Toast bread on one side only.
- Spread onion confit on untoasted side.
- Layer tomato and rocket and dress with mayonnaise.
- Slice meat, dress with reduced marinade
- Place on top of salad and top with toasted bread.
